Processed foods are foods that are pre-prepared for us, and not by us, such as food that comes out of a box, can, or package. Any foods that are pre-washed or frozen before you buy are also considered processed.
Where’s the line between processed and unprocessed foods? It could be argued that all foods, unless eaten raw, are processed. For example, you can buy canned jam from the store and can your own jam. Both of these products are preserved, but because you can control what you put into your homemade jam, it is not considered processed. We as cooks can control what we put into the food we create at home and how much of each ingredient is in the food. We also don't have need or generally have access to the preservatives that are in almost all processed foods, because the shelf life of a product matters to the producers selling the product more than it does to you, the consumer.
